Mark was a very strong but gentle man. He was born in Yorkshire England. Trained in a five year apprenticeship at the Midland Hotel in Manchester, England and did a three year journeymen's ship all over Europe before returning to the Midland Hotel to receive the highest honor, a Black Cap European Chef. He had the honor of serving noted dignitaries like Ambassador Lawrence of Switzerland owner of the Hotel Del Coronado in San Diego, CA, Senator Kennedy, Jenney Craig, Joan Kroc, President Clinton and actors such as Bing Crosby, Frank Sinatra, Vincent Price and others.
Mark's presence was always remarkable through his cooking, story telling, good humor, respect for others, and always having manners and being totally respectful to ladies. He was the kind of man you would want as a friend knowing anything you told him would be confidential.
He will be sorely missed by all his family and the people who knew him best. May God take him in peace.
